Creme Patissiere

Creme patissiere is a traditional French cream used for filling and

stuffing desserts (Eclairs, Pies, Profiteroles...) that may now be made

without the use of refined sugar.

  • 2 Cups of Milk,
  • ½ of Tufah Apple Syrup,
  • ¼ of a Cup Corn Flour,
  • 3 eggs,
  • 1 Tablespoon of butter,
  • 1 Teaspoon vanilla,
  • Lemon peeling.

  • Heat the milk in a small saucepan with a few lemon peelings until it boils.
  • Turn off the heat and remove the lemon peeling from the milk to cool.
  • In a separate bowl, combine the eggs, corn flour, and Tufah Apple Syrup.
  • Add the milk to the mixture and stir well until it is homogenous.
  • Return to a pan and heat over medium heat for 2 minutes, then add the vanilla, mix well, and turn off the heat.
  • Add the butter right away, steer, and cover with cling paper until cold.
  • You can now use this preparation as a filling or as a dessert.
